Avocado Kale Caesar Salad + Crispy Potato Fries

These days I have been OBSESSED with all things Caesar. When I was in Ireland a few weeks ago, I had a Caesar salad for at least one meal per day. As you know, making things from scratch is my way of living. I like to know what is going into my body. Don’t get me wrong, I can definitely take longer and sometimes costs more money to make these recipes. That being said, this recipe is a clone to the original Caesar dressing that I crave (not the calories and fat). Now that we have made our salad even more healthy, I say, let’s have some crispy french fries as a great combination. The fries are tossed in olive oil and homemade breadcrumbs. Avocado Kale Caesar Salad + Crispy French Fries

Avocado Kale Caesar Salad + Crispy French Fries

Prep Time: 10 minutes

  • Cook Time: 0 minutes

  • Yield: 4 servings as an entree salad, 6 as a side

    Avocado Caesar Dressing:

    • avocado, divided

    • 1/2 cup water

    • 1/4 cup mayonnaise or Plain full-fat yogurt

    • 2 small cloves garlic

    • 2 tablespoons lemon juice

    • 1 teaspoon Dijon mustard

    • 1/4 teaspoon salt

    Kale Caesar Salad:

    • 1 bunch kale, stems removed, chopped (5-6 cups)

    • Parmesan and/or pepitas for topping


Directions

  1. Cut the avocado in half.

  2. Reserve one half for the salad. Blend the other half with the water, mayo, garlic, lemon juice, Dijon, and salt. Taste and adjust!

  3. Toss the chopped kale with the dressing. Throw in a handful of pepitas and Parmesan and toss it all around. Finish the salad with the remaining half of the avocado, cut into cubes. YUM!
